Rockville has a new kosher bakery and market: Medina Cuisine, now open at the Randolph Shopping Center on Nebel Street. This is the first walk-in storefront for owner Michael Medina, a longtime kosher caterer who previously operated from the kitchens of local synagogues. At the shop, Medina is baking up all kinds of desserts and three kinds of challah, plus an assortment of other breads including multigrain baguettes, marble rye and raisin walnut loaves. He also offers coffee, kosher wines, homemade frozen soups, and prepared foods from brisket and schnitzel to Moroccan chicken and ribeye with chimichurri sauce. “We try to formulate menus outside of the typical Jewish or kosher scope,” says Medina, who will continue to run his catering business behind the scenes. “We’re giving it a little bit of Moroccan and North African flair.”
