It’s almost time for a new taqueria in Rockville. Taco Bamba is planning a June 4th opening at Congressional Plaza, where chef/owner Victor Albisu has been renovating the former Modern Market space next to Chopt. Albisu, a two-time semi-finalist for the James Beard Foundation’s Chef Awards, is known for offbeat and flavor-filled tacos with names like Fun’s Over, One Night in Bangkok and Slumdog Millionaire. This will be Taco Bamba’s first location in Maryland, and Albisu promises vegetarian options as well as Maryland-inspired dishes, local beer, Mexican beer and agave-infused cocktails.
