Here’s a sneak peek at plans for Maurizio’s, the newest fine-dining concept from the Cava guys, soon to open at the former Renato’s space in Potomac Village. Owners Ted Xenohristos, Dimitri Moshovitis and Ike Grigoropoulos — who created the original Cava Mezze as well as the Cava fast-casual restaurant chain — are cooking up a Potomac Village sister to their upscale restaurants Julii, Melina and Bouboulina at Pike & Rose. The same executive chef, Aris Tsekouras, will run the kitchen at Maurizio’s as well. His coastal Italian menu will feature small plates, pastas and classics like linguine and clams, slow-braised beef, grilled branzino and chicken parm. Also: A dedicated “Negroni Bar” menu offering riffs on the classic Mediterranean cocktail.
