ZiZa Kabob, the newest addition to the Wegmans-anchored Twinbrook Quarter, makes its debut this weekend on Rockville Pike. The two-story dining room may look a bit fancy, but ZiZa is actually a fast-casual spot. “We’d like to do fine dining here eventually, but not yet,” says owner Fahim Rafiq. “For right now, customers will order at the counter and we’ll bring the food to you.”
Rafiq and his brother Eshan, who followed their father into the restaurant business, opened the first ZiZa four years ago in Howard County. The halal menu is focused on recipes the family brought over from Afghanistan. That includes dishes like aushak (scallion-filled ravioli with mint and garlic sauce); kadu (pan-fried pumpkin with sugar and spices); and bolani (fried flatbread stuffed with seasoned potatoes, garlic and cilantro). “It’s pretty much everything my brother and I grew up eating,” Rafiq says. “All the things that were our favorites, they’re all on this menu.”
