Here’s a sneak peek of Taco Bamba, opening Friday (June 4th) at Rockville’s Congressional Plaza. This is not your typical taco joint: Chef/owner Victor Albisu, a two-time semi-finalist for the James Beard Chef Award, has created a custom menu for his first-ever Maryland location. Check out the MoCo Crab (griddled crab melt, spicy mayo, vinegar slaw and chile); the Pike (crispy grouper, Maryland crab spread, queso and pickled jalapeño); or the Mrs. Hogan (kalbi pork, gochujang and kimchi bacon fried rice). Also: craft cocktails like the Flama Blanca Paloma (with mezcal and grapefruit) for under $10. “We come up with names that we find funny or interesting, and those names inspire ideas in our heads, and then we go and cook up those ideas,” Albisu says. “We really like to put a lot of impact into a three- or four- or five-dollar bite of food.
